Exactly..old Chinese saying, "cup too hot to hold, too hot to drink"..
A painted surface exposed to direct sunlight can easily reach over 120 degrees in 75 degree ambient temps. So, yes the top can be too hot to handle when general conditions are perfect for top down driving.
I keep cleaning towels in my door map pocket and grab 2 when the roof is hot. In direct sunlight at 75- 80 degrees the roof can be very hot but perfect for a top off drive despite the several contrary posts !
When I had my previous coupes, I used simple high quality rubber kitchen gloves, they protect from hot water burns and will protect your hands from the heat of the sun on the removable top. As a plus, they provide a great grip, and you will not get your fingerprints all over the top.
